Green tea
General information
Green tea is unfermented and is cherished in China for its fresh, seasonal character. Green tea is made from tea leaves that are not or barely oxidized.
- Immediately after picking, the leaves wilt briefly
- Then they are steamed or roasted
- Finally, the leaves are dried
The taste of green tea fades relatively quickly. For the best taste experience, it is recommended to drink the tea within two years of picking.
Preparation
Green tea is brewed with water at 75°C to 85°C. At higher temperatures, bitter substances are released. Let the tea steep for about 5 minutes so that the beneficial substances are optimally released.

Flavor profile: Fresh, grassy, slightly umami, sometimes citrusy or nutty.
Combinations:
