Although green tea has been steamed in China since the Tang Dynasty (618-907), stir-fried green tea is the most common form today. Yu Lu is one of the few green teas in China that is still traditionally steamed (Zhēng qīng 蒸青). Compared to Japanese steamed green tea, Yu Lu undergoes a milder steaming process, resulting in a light, smooth, and refreshing flavor with less pronounced grassy notes.
