Long Jing, also known as Dragon Well, is a prestigious variety of stir-fried green tea from Longjing Village in Hangzhou, Zhejiang Province, China. It is prized for its exceptional quality and has been awarded the esteemed title of "China Famous Tea."
Long Jing tea leaves are typically harvested in early spring, with only the tenderest buds and leaves picked. The leaves are then carefully processed by hand, which involves frying them in a wok to prevent oxidation and shape the leaves into their characteristic flat, sword-like shape.
Long Jing tea is not only a delicious tea but also a symbol of Chinese tea culture and tradition. It is often enjoyed on its own or paired with light meals and desserts.
The cultivar from which Long Jing is harvested was bred in the 1990s from tea seeds. This means the roots are deep in the ground, allowing the plant to absorb many minerals from the soil.
